Bacon and Vegetable Risotto Recipe

This is my second post of the day because I couldn't decide which topic I should blog about so I went for both.

I am getting very into cooking and healthy eating lately mostly because I told myself that I am going to cut out junk food (which has kinda gone to plan)! I've got so many recipes I want to try out and this is one that I made last week for dinner.

It was a last minute decision to make it but I was very excited to try it out. I have made risottos before but they haven't always been that nice mostly because there have been meats and vegetables in it that I didn't like. I decided to put in bacon and vegetables to make the dish a variety. It is very simple to make so if your someone who isn't good at following recipes then your be fine with this one.

Ingredients for Bacon and Vegetable risotto:   

  • 100g Arborio Rice
  • 2 rashes of bacon (I used smoked)
  • 50g mixed vegetables (I used the frozen ones)
  • 1 litre of chicken stock
Method: (Serves 1)
  1. Chop up bacon into small pieces then fry in hot oil until cooked
  2. After bacon is cooked empty frying pan and melt some butter for the rice
  3. Place rice in the pan and cover with melted butter then gradually add the chicken stock so the rice is covered. Keep adding the chicken stock because the rice absorbs the liquid.
  4. Whilst rice is cooking boil the vegetables.
  5. After 10 minutes add the vegetables and bacon to the rice.
  6. Mix that together and let it cook for about another 20 minutes but keep adding hot water or another lot of chicken stock as the rice absorbs the liquid. 
  7. Once rice is soft and has absorbed all the liquid serve onto a plate and enjoy! 
TIP: The aborio rice absorbs liquids quickly so keep adding water or stock until the rice is soft.
Vegetable and Bacon Risotto finished edition  
This is the perfect healthy meal and can be adapted to your taste. Anything can be added to the risotto which is why it's one of my favourite dishes.
